Air Lab is a hidden gem in Cabramatta, a trendy little shop famous for its creamy soufflé cakes. You can watch the entire process through the glass window. It’s been so long since we’ve had such fluffy and tasty Japanese soufflés. They’re so soft and jiggly, just looking at them makes you happy. The variety of flavours they offer is incredible from Oreo, Taro, Matcha, Strawberry Cereal, Crème Brûlée, Tiramisu, Biscoff, and more we can’t even remember!
It seems like most people choose the Crème Brûlée flavour. After it’s out of the oven, they sprinkle sugar on top and use a blowtorch to caramelise it. If you’re not into sweets, we’d suggest just having a small taste of the top layer. The cake itself has a moderate sweetness (only for the Crème Brûlée). The creamy, jiggly texture is really delicious.
What we have tried
We tried their Crème Brûlée one, and you must add pearls and ice cream. Each bite is soft, fragrant, and tender, without being overly sweet—so satisfying.
The other one we tried was Biscoff. You have to dig into the soufflé with cream and jam. The texture is just out of this world!
Besides soufflés, they also have egg waffles filled with different flavours of ice cream and cream puffs with so many options.
If you’re in Cabramatta, you can’t miss this place! The only downside is that there’s no seating, so you’ll have to eat it while standing on the street.
