I’d known about this place for ages and just never got round to going, and now that I’ve been I should have gone so much earlier, it was so good! It’s Soufflé Japancakes in Greenslopes, tucked away on the Brisbane southside, and the Japanese soufflé pancakes there are made to order and wobble when they land on the table. Before this, if I wanted them I had to wait for a pop-up store or trek across to the north side, so having them close to home makes me really happy. We’ve tried a few flavours now, here’s everything we ate.
The pancakes themselves
The soufflé is so soft and bouncy, and it has no eggy smell at all, which is what usually puts me off. They’re made to order, and every flavour I tried had a really nice texture.
The matcha one
The matcha pancake was my favourite. It isn’t sweet and sickly, and it isn’t bitter either, it’s just right, and with strawberry and red bean on top it looks beautiful and tastes even better. I’ll definitely go back to try other flavours.
The savoury Osaka-yaki one
For the savoury one we picked the seasonal Osaka-yaki flavour. The bonito flakes taste was really strong, and it said there was chicken in it, but there was only a tiny bit.
Crème brûlée and Earl Grey
We also tried the Crème brûlée and Earl Grey flavours, and they tasted just as good as the pop-up store that always had huge queues. The plating is even prettier here. Asian desserts manage to be satisfying without being too sweet, and these were a perfect example.
The mochi ice cream
They also have a mochi ice cream, and it’s a weekend-only special at the moment. The mochi is chewy and stretchy, really satisfying to bite. I picked the one filled with hojicha ice cream, and while you can taste the tea, I felt the mochi covered up the flavour a bit.
The drinks were really good too, so don’t skip them.

Prices and portions
It’s a little pricey, and the portions aren’t huge. Worth knowing before you go, but I was happy with what we got.
Where it is and when it’s open
Soufflé Japancakes’ own website lists the Greenslopes shop at 389 Cornwall Street, open 7am to 4pm every day. Some older listings and maps still show 588 Logan Road, so check the address before you leave. It’s listed as good for groups and families. They also have a shop in Noosaville.
Is it worth it
Yes! If you love soufflé pancakes, don’t miss it. The pancakes are soft and bouncy, the matcha one is perfect, the plating is gorgeous, and it’s good for a sweet treat with friends. Just go in knowing it’s a bit pricey and the serves aren’t big.
