I saw on Instagram that Callé had quietly launched something new again, so I rushed over on the weekend to take a look. This time they’d put a whole chocolate cookie right on top of the drink. Topping drinks have become so competitive in Melbourne lately.
The new Cookie Butter Biscoff series
The new release was a Cookie Butter Biscoff series, with a matcha version and a latte version. I’m a matcha person, of course, so I ordered two matchas, hhhh.
The drink is matcha with house-made Biscoff biscuit paste and a cookie butter cream top, with a caramel-coloured layer of biscuit paste at the bottom. It tastes like caramel biscuit, sweet and fragrant, but the matcha is still strong and the drink isn’t very sweet.
A whole cookie on top
The cookie sitting on the drink is huge. It’s their new recipe, a brown butter chocolate chip cookie, with generous chunks of chocolate. The edges are a little crisp and the middle is soft, with a salty hint of sea salt. Who else would get this? You can break it up and eat it, or dunk it straight into the matcha.
Ordering from this series cost $2 extra. It was only on until 1 November, so it’s finished now.
You don’t need Lune, Agathe or Cobb Lane for a good croissant
They have plenty of good croissants too. When you’re thinking of croissants in Melbourne, you don’t have to go to Lune, Agathe or Cobb Lane. Come to Carlton North for all kinds of good pastries, and they aren’t that expensive.
The croissant wheel is pretty good, and the pastry on it is made especially crisp, so full marks for that. The cinnamon roll and another chocolate pastry were both quite sweet, which explains why so many locals queue.

The Halloween special was the best I’ve had
They also had a Halloween special, and I’ll declare it the best Halloween special I’ve ever eaten. The pumpkin cake sandwiched in a crisp tart is perfect, and with the spiced cream the texture is wonderful. I was made happy by a cute pumpkin all morning.
Callé Bakery is at 649 Rathdowne St, Carlton North VIC 3054. I took the hours as 8am to 4pm, closed on Mondays.
What else is worth knowing
Callé is a family-run bakery on Rathdowne Street that opened in 2022. Co-owner Vivian Ly has said the croissant wheels were inspired by the ones at Lafayette. It has gone viral more than once, first for its cookie croissant and more recently for a hot chocolate-filled croissant. A second location has since opened on High Street in Northcote. A June 2026 listing gives the Carlton North hours as 7am to 4pm Tuesday to Friday and 8am to 4pm on weekends, closed on Mondays. So the 8am start in your notes only holds on weekends.
Would we go back?
Yes, probably for the croissant wheel and whatever the next limited release is. If you’re planning a Melbourne pastry day, OMO Cafe and Bbing Chillin are two more stops we’ve reviewed, and there are more in our dessert café reviews.
