Wore ourselves out walking around the CBD, friend picked this one out, not a shop I’d have noticed myself. Easy to spot though, right on the street. Turned out to be the better find of the day.

One spoonful and I was straight back to being a kid, my aunt used to bring me ube ice cream whenever she visited. Same colour, same flavour, exactly that. Prices here are low too, $18 to $22 across the board, maybe the cheapest bingsu in Melbourne. Good value for what you get, a touch sweet. Ube was the favourite of the day. Matcha latte was forgettable, though the little dog on the cup art was cute.

What we like

White Peach Oolong

Tea and milk blended smoothly, a faint coffee-like note underneath, chewy coconut jelly mixed through, plenty going on texture-wise. Torched caramel pudding on top, crisp burnt shell, creamy underneath, and it runs the second you cut into it. Light overall, not sickly, fine for anyone who doesn’t want something too sweet.

Mango

Fresh mango blended straight into the ice, sweet-tart balance done right, properly tropical from the first sip. You can add a mayo-based sauce if you want something richer, or skip it and keep it plain, works either way. Comes with mango chunks and a crunchy topping scattered through.

Iced Matcha Strawberry

Best thing we ordered. Matcha’s slight bitterness cuts the strawberry sweetness exactly right, looks great layered in the cup, and drinks clean without ever turning heavy. Works alongside the bingsu or the waffle, hard to get wrong.

Apple Pie Waffle

Best waffle I’ve had, crisp outside, soft in the middle, good toasted edge on it. Apple compote and cream packed into the centre, a scoop of vanilla ice cream and more cream on top. Sauce runs a bit sweet, so say something at the counter if you’d rather go lighter on it.

Worth it

Bing Chillin is at 398 Lonsdale Street, Melbourne CBD, street-facing and easy to find. They’ve got MATEPOWER power banks in store too, handy if your phone’s dying mid photo session.
